Okay, now whose ready to crumble on this fine morning…
Lemon Crumb Mug Cake
Single serving mug cake filled with spring flavors! Even better- topped with crumble and a sugar free glaze! Moist, flavorful, and bursting with lemon.

Ingredients
- 3tbsp almond flour
- 1tbsp Coconut Flour
- 1tsp Lemon Juicefresh or extract
- 1/2tsp Baking Powder
- 1tbsp Peanut Buttergooey
- 2tbsp yogurtDF or greek or quark
- 1tbsp Milkplant based
Instructions
- In a lightly sprayed or oiled mug, whisk together the dry ingredients with a fork.
- In a separate bowl, mix the wet ingredients.
- Mix in the wet mixture to the the mug.*
- Microwave for 1-2 minutes until cake like texture forms.
Recipe Notes
* If the batter is too dry, add more milk until the batter is smooth and thick. Sugar Free Glaze: 2-3 tbsp SF powder + 1-2 tsp milk of choice
